THE PROTOCOL IN PRACTICE
Every culture has its kiln. Ours is cast iron, heated to 375°F, where the masa meets fire for exactly 47 seconds.

THE SILVER BLISTER PROTOCOL
Place 3oz disk of hydrated masa onto preheated comal. Listen for the first crackle (≈8 sec). Observe surface tension shift at 19 sec. Flip at 47 sec when silver blister reaches ⅓ diameter. Second side: 23 sec until golden-brown mottling covers 60% of surface.
THE BREATH TEST
Lift tortilla. Hold 3 inches from face. Inhale. If you smell toasted corn rather than charred starch, proceed. If char dominates, recalibrate comal temp down 12°F. The nose is the final sensor.
THE HAND-FOLD VERIFICATION
At room temperature (not hot), attempt 90° fold along radial axis. Properly nixtamalized masa yields without fracture. Brittle snap indicates insufficient alkali treatment or incomplete gelatinization. Return to Phase I.
